King Cake Cupcakes

Forgive me if I've posted this recipe before, but this recipe is easy and wonderful, and can be adjusted in preparation for bite size portions, larger rolls, or even together for a close king cake resemblance.


King Cake Cupcakes:
3 - (8 oz) containers refrigerated crescent rolls
1 - (8 oz) package cream cheese, softened
1 - cup confectioners sugar (powdered sugar)
1 - teaspoon lemon extract

Icing:
1 - 1/2 cups confectioner’s sugar
3 - 4 tablespoons milk (more if needed)
1/2 - tsp clear vanilla extract, optional
green, purple & gold sprinkles

Preheat oven to 350 degrees. Line a 12-cup muffin pan with cupcake liners. In small bowl, combine cream cheese, powdered sugar and lemon extract; mix until blended.

On lightly floured surface, unroll each can of crescent rolls and separate each into 4 rectangles. Press perforations to seal.

Spread about 2 tablespoons cream cheese filling down the center of each rectangle. leaving a 1/2-inch border around the edges.

Working with 1 rectangle at a time fold the top of the dough towards the center, then fold the bottom of the dough toward the center and overlap.

Fold the left side of the dough in to the middle. Fold the right side on top of the left side.
Place dough spiral side up into prepared muffin pan. Repeat procedure with remaining rectangles.

Bake for 18-22 minutes or until brown. In a small bowl, whisk confectioners' sugar, and milk until smooth. Drizzle over warm cakes while in pan. Quickly add green, purple & yellow sprinkles.

Rain Boots, Pajamas, and Wheel Barrows

 In hopes of snow I bought Jett a pair of rain boots, he loves a puddle.  He had to show his Daddy how he could walk in them.  He was a hoot, my faithful blog readers know I have issue with the way most little boys are dressed these days and that even goes for shoes.  He wears his gray new balance which we call his fast shoes, his red keds, and his white walkers for church.

 He giggled and stomped around the house before he realized they really aren't that comfortable and needed them off.  Our sweet friend brought us a toy from her boys' younger days and with the crazy weather we are using it to haul trains from one room to another, rather than outside for gardening.

Baby Wallace's Gender Reveal

Four Months Out

It's been four months since Daddy passed away.
People have stopped asking how I'm doing, stopped thinking about it.
To be honest, there are days in the last four and half months I haven't thought on it for more than a moment, but there have also been days when I have been stopped in my tracks by the realization that I will never hear his voice again.
The holiday season was a blur and I would say it wasn't unbearable.  It is easy to busy yourself with schedules and parties and to do lists.
Then the January blahs hit.  By the last week of January I found myself crying more in a week than I had in the prior month.
On my way to work twice with Jett in the car I just lost it.  One morning when everything was going right, class had been great the night before and I had those rare mom victory moments when you get out of the house having loaded and unloaded the dishwasher, fixed everyone lunch, and everyone was happy...when I looked down at my phone and thought I need to call someone.  Who would be up right now willing to have a conversation...then it hit me.  Daddy would have been my go to call, my person who would answer at 6 a.m. and would listen to my ramblings, he would tell me about the weather, the latest Ecru gossip, and ask me some question I answered a thousand times before.  In that instant I felt so sad, so mad, so upset.
And even as I type this as a way to kill some time before picking up dinner for a party tonight, I'm upset again...on a random afternoon.
Let me not glorify our relationship and have anyone think it was picturesque.  Our was not one depicted on the cover of the Saturday evening post.  But there were times when just having someone to tell about your day even the mundane parts was just nice.  Sure I tell Cullen and my mom about things, but with my dad I just could say something and not have to explain it, not have to give any extra information or background information.  He didn't have a clue what half the education jargon I talked about meant but he listened or changed the subject or redirected the convo.

Ice Ice Baby

 The only good thing about Icey Weather is that it melts into puddles and this little boy love a puddle.  He can't say puddle it usually comes out puh-wle.

Worn out at Walmart

Bless his heart! After morning pictures with Mr. Trent a run to Walmart left Jett Boy passed out. My baby boy who is always up for an putting just had too much excitement before noon and while picking out Valentine's happies with my mom fell asleep on her arm. Good thing the stuffed animals were near and they made a makeshift pillow for him.
